Ingredients
  

  • 2 large eggplants sliced lengthwise into 1/4-inch thick strips
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese ensure it's gluten-free
  • 1 cup spinach chopped
  • 1/4 cup grated Parmesan cheese
  • 1 egg beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 cups marinara sauce gluten-free
  • 1/2 cup shredded mozzarella cheese gluten-free
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the Oven & Prepare Eggplants: Preheat your oven to 375°F (190°C). Brush both sides of the eggplant slices with olive oil and season with salt and pepper. Arrange them on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, or until soft and pliable. Remove from the oven and let cool slightly.
  • Prepare the Filling: In a mixing bowl, combine the ricotta cheese, spinach, Parmesan cheese, beaten egg, oregano, and garlic powder. Season with salt and pepper to taste and mix well.
  • Assemble the Eggplant Rolls: Spread a spoonful of the ricotta mixture onto each eggplant slice, leaving a small border around the edges. Roll up the slices from one end to the other and secure with a toothpick if needed.
  • Layer with Sauce and Cheese: Spread half of the marinara sauce on the bottom of a baking dish. Place the eggplant rolls seam-side down in the dish. Top with the remaining marinara sauce and sprinkle with shredded mozzarella cheese.
  • Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.
