- 2 large eggplants sliced lengthwise into 1/4-inch thick strips
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese ensure it's gluten-free
- 1 cup spinach chopped
- 1/4 cup grated Parmesan cheese
- 1 egg beaten
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 cups marinara sauce gluten-free
- 1/2 cup shredded mozzarella cheese gluten-free
- Fresh basil leaves for garnish
Preheat the Oven & Prepare Eggplants: Preheat your oven to 375°F (190°C). Brush both sides of the eggplant slices with olive oil and season with salt and pepper. Arrange them on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, or until soft and pliable. Remove from the oven and let cool slightly.
Prepare the Filling: In a mixing bowl, combine the ricotta cheese, spinach, Parmesan cheese, beaten egg, oregano, and garlic powder. Season with salt and pepper to taste and mix well.
Assemble the Eggplant Rolls: Spread a spoonful of the ricotta mixture onto each eggplant slice, leaving a small border around the edges. Roll up the slices from one end to the other and secure with a toothpick if needed.
