Ingredients
  

  • 2 medium zucchinis sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium eggplant diced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup hummus
  • 4 whole wheat pita breads
  • Fresh spinach or mixed greens for filling
  • Feta cheese crumbled (optional)
  • Sliced olives optional

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Vegetables: In a large bowl, toss the sliced zucchinis, bell peppers, and diced eggplant with olive oil, dried oregano, salt, and pepper.
  • Roast the Vegetables: Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  • Assemble the Wraps: Spread a generous layer of hummus on each pita bread, add a handful of fresh spinach or mixed greens, and top with the roasted vegetables. If desired, sprinkle with feta cheese and sliced olives.
