Ingredients
  

  • 1 cup green or brown lentils rinsed and drained
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley and/or cilantro chopped for garnish
  • Juice of 1 lemon optional

Instructions
 

  • Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Stir in the minced garlic, cumin, and smoked paprika, and cook for an additional minute until fragrant.
  • Add Lentils and Broth: Add the rinsed lentils to the pot along with the vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30-35 minutes or until lentils are tender.
  • Season and Serve: Season the soup with salt and pepper to taste. Optionally, stir in lemon juice for a bright finish. Serve hot, garnished with fresh herbs.
